Chapter One

The ice is wrong.

I clock it the second Tamsin pulls the bin from the back of the catering van—cloudy, undersized, already sweating in the New Orleans heat. Machine ice. The kind of ice you dump into a cooler at a crawfish boil, not the kind you put in a coupe at a five-thousand-dollar-a-plate hotel reopening.

She looks up from hauling the second bin. Her hair is already escaping its clip. We’ve been on-site forty minutes and the gala doesn’t start for two hours.

I pull out my phone and call our supplier. He picks up on the fourth ring and starts explaining about construction and a detour, and I cut him off because I do not have the bandwidth to hear about traffic when I’m standing in the service corridor of a hundred-and-forty-year-old hotel trying to make two hundred hand-carved cocktails with ice that looks like it was scraped off someone’s windshield.

Thirteen minutes later, a sweating delivery driver wheels in four cases of crystal-clear large-format blocks. I tip him forty dollars and start breaking them down with a pick while Tamsin organizes the backup station.

This is the part nobody sees. The part that happens before the first guest walks through the door, before the bartender smiles and makes it look effortless, before anybody orders a drink and gets to feel like the most important person in the room for sixty seconds. The infrastructure. The sweat equity. The frantic problem-solving in a service corridor that smells like bleach and old brick.
